Monday: Day 0 Prepping Day
Meal 1: Roasted Potatoes with Kale and Chicken Sausage topped with eggs and coffee with Nutpod
Meal 2: Leftover over Instant Pot Buttery Chicken or Curry Chicken Salad
Meal 3: Creamy Tuscan Chicken with Cauliflower rice
Snack: Apple with Almond Butter

Tuesday: Day 1
Meal 1: Roasted Potatoes with Kale and Chicken Sausage topped with eggs and coffee with Nutpod
Meal 2: Leftover Creamy Tuscan Chicken or Curry Chicken Salad with kale
Meal 3: Sweet Potato and Jalapeño Turkey Stew (Crockpot)
Snack: Herbal Tea or Apple with Almond butter and unsweetened shredded coconut

Today begins round 6 for me on Whole30 and I’m excited to detox from sugar and get my nutritional needs back on track.  I’m excited to eat some of our favorites and try some new recipes.  Everything is prepared and ready to just throw together so it should be a nice and easy week.  Now I just need to step up on my water intake and workouts to get me moving.  I will post my daily meals in our Facebook group and then do a weekly log on my blog to those who are interested.  Hope everyone has a happy and healthy week!

This weeks recipes are from one of my favorite websites Paleo Running Momma, she has so many tasty recipes and I was missing some of them that I decided to make this weeks menu using hers.  Some I have had and some are new, I also tried to find receipts that I could make Vegetarian for my older daughter and that way I’m not having to make so many meals.  So I found side dishes and then adding chicken to the side to make them a complete meal for the rest of us.  Hope everyone has a happy and healthy week!!! I’m back with my weekly meal planning, it’s been way too long since I have worked and created my food menu which means I need to dive back into it and get my butt in gear for the new year.  I’m changing things up a bit for the next few weeks since I have been having weird stomach issues again, from what I have been reading a good reset with whole plant based foods is a good start so that’s exactly what I’m doing.  I’m going to stick with whole grain foods, cut out a lot of sugar and go back to eating healthy so my body can heal and I can work towards getting myself back into training mode.  I’m excited to use my new Fork Over Knives Cookbook that I got for Christmas so this weeks meal menu is using the new recipes.  I will be posting updates in my Facebook group along with pictures and my review of the recipes to share with others.  Happy New Year and hope everyone has a very healthy 2020.

New Recipe - Crockpot Mustard Chicken Drumsticks (Paleo, Keto and Whole30)

Crockpot Mustard Chicken Drumsticks 

Ingredients:
1/4 cup Mustard (I used part Stone Ground and Spicy Brown, Dijon would be great too)
1/4 cup Chicken Broth or Bone Broth
2 tbsp Tessemae’s Classic Balsamic Dressing
1 to 2 Garlic Cloves (minced)
Salt and Pepper
8 Skin-On Chicken Drumsticks

Directions:

  1. Place chicken drumsticks into crockpot sprinkle with salt and pepper.
  2. Whisk together all the sauce ingredients in a bowl and pour over chicken, make sure it covers all of the pieces.  
  3. Turn crockpot on low and cook for 5 to 6 hours, for faster cooking time place on high for 2 to 3 hours or until chicken is cooked.  
  4. When finished cooking use the juices from the sauce and chicken to base over the chicken before putting on a plate, use any of the sauce to serve on the chicken as well to add extra flavor or sauce when ready to eat.  Enjoy!!!

New Recipe - Dairy-Free Pumpkin Spice Keto Coffee Creamer (Paleo and Keto)


Dairy-Free Pumpkin Spice Keto Coffee Creamer

Ingredients:
1 can Full Fat Coconut Milk
1 tbsp Pumpkin Spice
1/2 tsp Cinnamon
1/3 cup Erythritol (Granulated) for Keto or Coconut Palm Sugar for Paleo
1 tbsp Pure Vanilla Extract
1/4 cup Pumpkin Purée

Directions:
1. Pour the Unsweetened Full Fat Coconut Milk into a 32 oz glass mason jar and warm it up in the microwave at power level 5 for 2 minutes, then stir it once it’s warmed.  Add the warmed coconut milk to a ninja blender or regular blender.

2. Add the remaining ingredients to the warmed coconut milk and blend for 1 minute on high until everything is mixed together.

3. Pour the blended milk and spices back into the 32 oz mason jar and cover tightly, place in the fridge for up to two weeks.

4. You can use this mixture to add to your daily coffee as creamer or add it to your bulletproof morning coffee as your full fat cream instead of heavy cream to keep it Paleo and dairy-free.

This is my favorite time of the year, I love pumpkin everything so this is a nice change for my morning bulletproof coffee.  I did add a squeeze of Caramel Sweet Leaf too which added a little caramel flavoring...yum!

I wanted to change things up this week by cutting back my dairy a bit, I have been eating a lot of it since I started on Keto and this past week my stomach has not been right.  I really miss eating more Paleo foods like I used too so I decided to cut back this week and eat more Paleo style foods but also stay on Keto.  I will be honest that I can’t wait until I get into maintenance as I will definitely go to a full Paleo lifestyle again.  I’m curious to see how this week goes and how my body will be feeling, it could also be the change of weather as it’s been hot and cold here in Texas.  The best part is most of these recipes are simple and easy so I’m hoping for a nice easy week.  Happy and Healthy cooking everyone!
