Ingredients

for the sweet/savory sauce


  • 1/3 cup pitted dates softened in hot water* and drained OR 1.5 Tbsp pure maple syrup for a non-Whole30 version
  • 2 tbsp water omit if using maple syrup
  • 1/3 cup coconut aminos
  • 2 tbsp brown mustard
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • 1/4 tsp paprika
  • 1/8 tsp black pepper

New Recipe - Paleo Slow Cooker BBQ Chicken (Paleo and Whole30)

Paleo Slow Cooker BBQ Chicken

Ingredients:
15 oz. tomato sauce
1 cup water
1/2 cup apple cider vinegar
1/3 cup honey or date paste for Whole30
1 tbsp lemon juice
2 tsp onion powder
1 1/2 tsp ground black pepper
1 1/2 tsp ground mustard
1 tsp paprika
1/2 tsp salt
1 yellow onion, diced
2 apples, diced
1 1/2 lbs. boneless skinless chicken breast or chicken thighs

Directions:
1. In a medium bowl, whisk together the tomato sauce, water, vinegar, honey or date paste, lemon juice, onion powder, pepper, mustard, paprika, and salt. Stir well to combine.
2. Place the chicken in the bottom of the slow cooker. Top with the diced onion and apples. Pour the barbecue sauce over everything. Cover and cook on low heat for 6 hours. Serve warm.
Servings: 4
Paleo Slow Cooker BBQ Chicken
I found this recipe on Paleo Grubs but made some modifications to it in order to make it Whole30 approved. This is a nice and easy recipe for those crazy busy nights, I would op this over a baked potato (regular or sweet) or over cauliflower rice to make it a complete meal. Enjoy and happy cooking.

Meal 2: Leftover over Instant Pot Buttery Chicken or Curry Chicken Salad
Meal 3: Creamy Tuscan Chicken with Cauliflower rice
Snack: Apple with Almond Butter

Tuesday: Day 1
Meal 1: Roasted Potatoes with Kale and Chicken Sausage topped with eggs and coffee with Nutpod
Meal 2: Leftover Creamy Tuscan Chicken or Curry Chicken Salad with kale
Meal 3: Sweet Potato and Jalapeño Turkey Stew (Crockpot)
Snack: Herbal Tea or Apple with Almond butter and unsweetened shredded coconut

Wednesday: Day 2
Meal 1: Roasted Potatoes with Kale and Chicken Sausage topped with eggs and coffee with Nutpod
Meal 2: Leftover Sweet Potato and Jalapeño Turkey Stew
Meal 3: Paleo Shepherd’s Pie
Snack: Curry Chicken Salad

Thursday: Day 3
Meal 1: Italian Breakfast Casserole with fruit and coffee with Nutpod
Meal 2: Leftover Paleo Shepherd’s Pie or Sweet Potato and Jalapeño Turkey Stew
Meal 3: Cuban Chicken with Peppers and Onions over cauliflower rice (Crockpot)
Snack: Curry Chicken Salad

Friday: Day 4
Meal 1: Italian Breakfast Casserole with fruit and coffee with Nutpod
Meal 2: Leftover Cuban Chicken with Peppers and Onions or other dinners
Meal 3: Fennel Soup with Spinach and Spicy Sausage (Turkey)
Snack: Curry Chicken Salad or Apple with Almond Butter or Herbal Tea

Saturday: Day 5
Meal 1: Italian Breakfast Casserole with fruit and coffee with Nutpod
Meal 2: Leftover Fennel Soup with Spinach and Spicy Sausage (Turkey)
Meal 3: Buffalo Chicken Cauliflower Rice Casserole
Snack: Celery with almond butter and raisins or herbal tea

Today begins round 6 for me on Whole30 and I’m excited to detox from sugar and get my nutritional needs back on track.  I’m excited to eat some of our favorites and try some new recipes.  Everything is prepared and ready to just throw together so it should be a nice and easy week.  Now I just need to step up on my water intake and workouts to get me moving.  I will post my daily meals in our Facebook group and then do a weekly log on my blog to those who are interested.  Hope everyone has a happy and healthy week!

This weeks recipes are from one of my favorite websites Paleo Running Momma, she has so many tasty recipes and I was missing some of them that I decided to make this weeks menu using hers.  Some I have had and some are new, I also tried to find receipts that I could make Vegetarian for my older daughter and that way I’m not having to make so many meals.  So I found side dishes and then adding chicken to the side to make them a complete meal for the rest of us.  Hope everyone has a happy and healthy week!!! I’m back with my weekly meal planning, it’s been way too long since I have worked and created my food menu which means I need to dive back into it and get my butt in gear for the new year.  I’m changing things up a bit for the next few weeks since I have been having weird stomach issues again, from what I have been reading a good reset with whole plant based foods is a good start so that’s exactly what I’m doing.  I’m going to stick with whole grain foods, cut out a lot of sugar and go back to eating healthy so my body can heal and I can work towards getting myself back into training mode.  I’m excited to use my new Fork Over Knives Cookbook that I got for Christmas so this weeks meal menu is using the new recipes.  I will be posting updates in my Facebook group along with pictures and my review of the recipes to share with others.  Happy New Year and hope everyone has a very healthy 2020.
