School is finally done and now we can enjoy our summer! This week I was looking for easy recipes as we have a busy week in the afternoons and evenings, I’m also trying to lower my carbs for the next few weeks to get us ready for my cousin’s wedding coming up but I’m still wanting to do Paleo too.  I found some awesome recipes on a website called Paleo Leap who has lots of great Paleo and Keto recipes, I have used this website before and and have really enjoyed a lot of her recipes so I created this weeks meal plan using some new recipes to try out. Excited for a week of catching up on house stuff, cleaning and get back to somewhat of a normal schedule plus lots of healthy cooking to keep us all on a good eating path. It’s been a few weeks since I have actually done some meal planning, just a crazy time of year with school coming to an end and summer fast approaching, we are all pretty much ready for it to be done so we can relax and get some sleep. We have some cooler weather coming in as well which helps with meal planning as I have been wanting to use my Instant Pot for quick meals but always too hot in the summer.  I decided to use some of my cookbooks this week, Well Fed 2, Paleo in 28 Days, Paleo Cooking with your Instant Pot and Paleo Baking at Home.  I will be sharing all my ingredient and meal pictures in my Facebook group, so if you are interested to see how the meals coming out please send me an invite to the group and check out what I’m making.
