I can’t believe how fast Thanksgiving is coming, we are less than two weeks away which is so exciting.  I’m already working on my Thanksgiving meal plan for the week and the day off so I know what I’m making and what I can use with all our leftovers. So weeks meal plan was actually very easy to plan, I was looking for a specific soup recipe in one of my Whole30 cookbooks and then started looking through the cookbook and found a bunch of old yummy recipes I have made before that would be perfect to prepare and eat this week.  I’m using two of my favorite Whole30 cookbooks Slow Cooker and Fast and Easy, I will share pictures of my meals in my Facebook group throughout the week.  There is a lot of germs and sickness going around please make sure you all up your winter vitamins and keep those immune systems healthy.  Hope everyone has a safe happy and healthy week!

We are heading into week 3 for the month of October already, this month is flying by and I can’t seem to keep up.  The weather in Texas looks to be all over the place for this upcoming week so I just picked easy recipes for both prep and cooking to make my life easier for me. I’m also working on a new running training plan as I wanted to sign up for a race in February and need to get my training in place which all these healthy recipes will help keep my nutrition at bay for now. Finally so cold weather is on it’s way, we had a beautiful overcast and rainy day yesterday and the temperature is showing to drop this week which will be so nice. I’m looking forward to making some soups this week and using my Crockpot for some easy meals.  I love being able to put on long sleeves, drinking hot coffee that gets cold in a few minutes and having to reheat every 10 minutes to get hot again. First week of October is down, it was a crazy busy week for our family but this time of year is always crazy for us.  It’s going to be another busy week with some warmer temperatures which is a bummer as we enjoyed last weeks cooler weather for sure.  I have lots of yummy recipes for this week just hoping to get them all cooked as we have plans each day in the evenings which means I will be cooking dinner around 3pm, we just may be eating reheated dinners all week. Lol The nice part when ordering groceries this week it was rather inexpensive compared to what we normally buy which is a good thing.  Looking forward to getting through this week to have cooler weather right around the corner, I can’t wait to make soups, stews and chili’s.  Hope everyone stay’s happy and healthy this week!  Make sure you and your family are staying hydrated and increasing those immunity vitamins.

I can't even believe that we are in October already, this year is flying by fast for us. I absolutely love this weather, waking up to cooler mornings and seeing all the fall colors around everyone's houses is wonderful. It's still warm during the day's so I'm not ready to make too many fall dishes yet until it gets a little colder out. This week's meal plan is all Paleo recipes thanks to Paleo Running Momma website, I will be making a bunch of white and brown rice and Rolled Oats Protein Balls for my daughters who need the extra carbs due to their sports schedules which I have included those recipes under the Snacks and Sweet Treats. It’s a new week and I decided to make it Instant Pot Recipes week, with having something going on each night as far as sports and activities it was perfect to find quick and easy meals that I prep ahead of time and cook quickly in the afternoons for early dinners.  I will be making one breakfast casserole that will cover me for the rest of the week and then will have leftovers for lunches this week.  Looking forward to some cooler weather and delicious meals this week. It’s time to go back to the foods the make me feel good and help provide me good gut health.  I have been really struggling with my stomach lately and after talking with my doctor I need to shift my focus back to the nutritional foods that heal my body and not cause so much inflammation.  I know my body pretty well at this point and I definitely know my trigger foods as to what makes me feel good and what doesn’t, there are some gray area foods that I’m sure not sure about however I will revisit those foods once I get my gut back into balance.  This weeks food menu I created using Real Simple Good website which are gluten-free and dairy free recipes which will help get me back on track to the foods I love. I have tried most of these recipes but did add a few new ones.  Remember to eat what makes you feel good, both for your gut and body.  What we think is good and healthy doesn’t always mean our bodies will accept it, we as individuals need to figure out what works for each of us, we must be patient and follow our own journey’s.
