Monday: 10/24/22
Meal 1: Scrambled Eggs with Sautéed Peppers and Onions with Coffee
Meal 2: Leftover dinner  
Meal 3: Chicken, Zucchini and Mushroom (swapping out yellow squash) Stir-Fry  

Tuesday: 10/25/22
Meal 1:  Skillet Eggs with Mushrooms and Bacon
Meal 2: Leftover dinner   
Meal 3: Low-Carb Pizza Chicken Bake with steamed broccoli 

Wednesday: 10/26/22
Meal 1: Skillet Eggs with Mushrooms and Bacon
Meal 2: Leftover dinner  
Meal 3: One Pan Baked Chicken and Broccoli 

Thursday: 10/27/22
Meal 1: Skillet Eggs with Mushrooms and Bacon
Meal 2: Leftover dinner 
Meal 3: Healthy Peanut Butter Chicken and Noodles

Friday: 10/28/22
Meal 1:  Skillet Eggs with Mushrooms and Bacon
Meal 2: Leftover dinner 
Meal 3: Chicken with Spinach, Sweet Potatoes and Mushrooms Recipe  

Saturday: 10/29/22
Meal 1: Mango, Avocado and Spinach Smoothie
Meal 2: Leftover dinner 
Meal 3: Leftover's from the week

Sunday: 10/30/22
Meal 1: Mango, Avocado and Spinach Smoothie
Meal 2: Leftover dinner 
Meal 3: Lemon and Garlic Chicken Drumsticks with Simple Roasted Radishes

We are heading into week 3 for the month of October already, this month is flying by and I can’t seem to keep up.  The weather in Texas looks to be all over the place for this upcoming week so I just picked easy recipes for both prep and cooking to make my life easier for me. I’m also working on a new running training plan as I wanted to sign up for a race in February and need to get my training in place which all these healthy recipes will help keep my nutrition at bay for now. Looking forward for some yummy healthy recipes for this week, I will be sharing them in my Facebook group.  Hope everyone has a safe happy and healthy week!
