It’s a new week and I decided to make it Instant Pot Recipes week, with having something going on each night as far as sports and activities it was perfect to find quick and easy meals that I prep ahead of time and cook quickly in the afternoons for early dinners.  I will be making one breakfast casserole that will cover me for the rest of the week and then will have leftovers for lunches this week.  Looking forward to some cooler weather and delicious meals this week. It’s time to go back to the foods the make me feel good and help provide me good gut health.  I have been really struggling with my stomach lately and after talking with my doctor I need to shift my focus back to the nutritional foods that heal my body and not cause so much inflammation.  I know my body pretty well at this point and I definitely know my trigger foods as to what makes me feel good and what doesn’t, there are some gray area foods that I’m sure not sure about however I will revisit those foods once I get my gut back into balance.  This weeks food menu I created using Real Simple Good website which are gluten-free and dairy free recipes which will help get me back on track to the foods I love. I have tried most of these recipes but did add a few new ones.  Remember to eat what makes you feel good, both for your gut and body.  What we think is good and healthy doesn’t always mean our bodies will accept it, we as individuals need to figure out what works for each of us, we must be patient and follow our own journey’s. We have a pretty full menu this week, lots to prep, cook and enjoy.  With the peak of the summer I though it was best to find easy salad recipes and grilled chicken recipes that way I don’t have to use my oven and warm up the house.  I also added in some recipes to help with balance for my daughter who is vegetarian but have the flexibility of adding cooked chicken for extra protein for us. School is finally done and now we can enjoy our summer! This week I was looking for easy recipes as we have a busy week in the afternoons and evenings, I’m also trying to lower my carbs for the next few weeks to get us ready for my cousin’s wedding coming up but I’m still wanting to do Paleo too.  I found some awesome recipes on a website called Paleo Leap who has lots of great Paleo and Keto recipes, I have used this website before and and have really enjoyed a lot of her recipes so I created this weeks meal plan using some new recipes to try out. Excited for a week of catching up on house stuff, cleaning and get back to somewhat of a normal schedule plus lots of healthy cooking to keep us all on a good eating path. It’s been a few weeks since I have actually done some meal planning, just a crazy time of year with school coming to an end and summer fast approaching, we are all pretty much ready for it to be done so we can relax and get some sleep. We have some cooler weather coming in as well which helps with meal planning as I have been wanting to use my Instant Pot for quick meals but always too hot in the summer.  I decided to use some of my cookbooks this week, Well Fed 2, Paleo in 28 Days, Paleo Cooking with your Instant Pot and Paleo Baking at Home.  I will be sharing all my ingredient and meal pictures in my Facebook group, so if you are interested to see how the meals coming out please send me an invite to the group and check out what I’m making. We have another busy week with lots of things going on after school so I was looking for quick recipes that take no time to prep and cook to make my life easier. I found a bunch of yummy recipes on Real Simple Good’s website, most of this weeks meal plan I have made but it’s been a while so it was time to go back to our favorites.  Even though they are Paleo recipes you can earlier add grains like steamed brown rice or quinoa or you can keep it simple and just enjoy it with cauliflower rice. The key this week for me is to make all of our snacks and sweet treats to help with packing lunches and healthy things for us to eat while running from one activity to another. Hope everyone has a very happy and healthy week, the weather outside has been beautiful go out and enjoy it before it gets too hot.
