School is finally done and now we can enjoy our summer! This week I was looking for easy recipes as we have a busy week in the afternoons and evenings, I’m also trying to lower my carbs for the next few weeks to get us ready for my cousin’s wedding coming up but I’m still wanting to do Paleo too.  I found some awesome recipes on a website called Paleo Leap who has lots of great Paleo and Keto recipes, I have used this website before and and have really enjoyed a lot of her recipes so I created this weeks meal plan using some new recipes to try out. Excited for a week of catching up on house stuff, cleaning and get back to somewhat of a normal schedule plus lots of healthy cooking to keep us all on a good eating path. It’s been a few weeks since I have actually done some meal planning, just a crazy time of year with school coming to an end and summer fast approaching, we are all pretty much ready for it to be done so we can relax and get some sleep. We have some cooler weather coming in as well which helps with meal planning as I have been wanting to use my Instant Pot for quick meals but always too hot in the summer.  I decided to use some of my cookbooks this week, Well Fed 2, Paleo in 28 Days, Paleo Cooking with your Instant Pot and Paleo Baking at Home.  I will be sharing all my ingredient and meal pictures in my Facebook group, so if you are interested to see how the meals coming out please send me an invite to the group and check out what I’m making. We have another busy week with lots of things going on after school so I was looking for quick recipes that take no time to prep and cook to make my life easier. I found a bunch of yummy recipes on Real Simple Good’s website, most of this weeks meal plan I have made but it’s been a while so it was time to go back to our favorites.  Even though they are Paleo recipes you can earlier add grains like steamed brown rice or quinoa or you can keep it simple and just enjoy it with cauliflower rice. The key this week for me is to make all of our snacks and sweet treats to help with packing lunches and healthy things for us to eat while running from one activity to another. Hope everyone has a very happy and healthy week, the weather outside has been beautiful go out and enjoy it before it gets too hot.

I have another full week of workouts at Orangetheory Fitness which means I need to make sure I’m getting in enough protein, carbs and fat before and after my workouts.  I’m excited for this weeks meal plan as I’m using all recipes from one of my favorite clean eating websites called Clean Food Crush.  Some of the recipes are old and some are new, it will be nice to have a great balance of all different types of food groups this week.  I’m going to really focus on my water intake as well as that will be super important for recovery for me this week.  Hope everyone has a safe and healthy week!!!

New Recipe - Paleo Roasted Sheet Pan Veggies (Whole30, Paleo and Clean Eating)



Paleo Roasted Sheet Pan Veggies 

Servings: 4 to 5  

Ingredients:
1 lb asparagus - washed and cut into 1 inch pieces 
2 bell peppers (any color) - sliced
1 yellow onion - sliced
8 oz white mushrooms - washed and quartered 
3 cloves Garlic - minced
1/4 cup Olive Oil 
1/4 cup Ghee - melted
2 tsp Italian Seasoning
1 tsp Smoked Paprika  
Salt and Pepper for extra seasoning  

Directions:
  1. Preheat oven to 400 degrees.
  2. In a bowl combine the ghee, olive oil, Italian seasoning, smoked paprika and salt and pepper to taste.
  3. Place all the veggies on a baking sheet including the minced garlic. 
  4. Drizzle the ghee and oil mixture over the veggies and mix by hand on the sheet pan.
  5. Bake in the oven for 25 minutes, mix veggies around and then add back to the oven for another 5 to 10 minutes. Serve while its hot and enjoy!!!

Tomorrow is March 1st already, how crazy is that??? That means Spring is upon us and right around the corner.  I do love Spring as it’s a fun time to plant all new flowers and that’s when the rain comes in for us. I did check the weather this week and looked for recipes to go along with the warmer temperatures coming our way.  Thank you Paleo Running Momma for this weeks recipes as I used all recipes from her website to create this weeks meal plan and I’m so excited.  She has posted a lot of new recipes that I have been wanting to try, so I thought this week would be perfect to give them a try.  I’m really trying to get back to doing 90-95% Paleo to try and keep my stomach at bay. The key this week for me is to stick to my meal plan, get my workouts in, drink my daily intake of water and journal my progression.  I hope everyone has a very happy and healthy week, if the weather is nice by you, go out get some fresh air and enjoy the sunshine.
